Cupping Notes
Sitio Baixadao is everything we’ve ever wanted in a Brazilian coffee. It is full of deep, dark chocolate notes that present in the same way a cacao nib would. To compliment, the beautiful and silky brown sugar notes are present throughout your cup. When cupping, we often try to relate a note to something familiar or nostalgic for our customers. With this Brazilian, we were tasting a lot of peanut and caramel, so, naturally, we were led to settle in on a PayDay candy bar.
Farming Notes
Sublime Sitio Baixadao hails from the Mantiqueria de Minas Region of Brazil. It is sourced from a farm called that same name of “Sitio Baixadao.” Sebastião Alfonso da Silva started farming coffee at Sitio Baixadao in the municipality of Cristina, Minas Gerais, Brazil and quickly became recognized for his crop. In 2014 and 2015, he won Cup of Excellence in Brazil for the highest scoring coffee in the history of their competition. According to Casa Brasil, “Sebastião’s quality comes from his ability to take advantage of the unique micro-climate of his farm in the Mantiqueira mountains, aided by high-altitude fields over 1300 meters above sea level, which are protected from wind and inclement weather. For most farms in Brazil, the harvest ends in September, but Sebastião and his family are able to harvest coffee as late as December due to later flowering of his plants, slower fruit maturation, and his decision to extend the harvest in pursuit of quality.” We believe you will taste the commitment to excellence in every cup.
