This coffee is just what we love about beautiful, washed Colombian microlots.

This washed Colombian is beautifully balanced — sweet, approachable, and deeply comforting, with just enough brightness to keep the cup lively from first sip to last.

Dark Chocolate.

The cup opens with a rich, grounding note of dark chocolate — smooth, velvety, and slightly bittersweet in the best possible way. It brings depth to the profile immediately, offering a luxurious foundation reminiscent of high-quality cocoa and warm, roasted sweetness.

Caramel.

As the coffee warms, a round caramel sweetness emerges. Buttery, golden, and gently creamy, it softens the darker edges and adds a silky mid-palate feel. It’s inviting, familiar, and effortlessly enjoyable — the kind of sweetness that makes this coffee endlessly sippable.

Red Apple.

The finish reveals a clean, refreshing lift — crisp red apple with a touch of malic brightness. It adds clarity and structure without overwhelming the cozy sweetness, leaving a lingering impression of fresh fruit balanced by smooth chocolate and caramel.

This coffee comes to us through our good friends Salem and Susana Bellah of Cormorant Coffee in Dallas, Texas. With Susana’s family roots in Colombia, she maintains a personal, longstanding relationship with the farmers behind this lot — a connection that allows us to offer this coffee with deep gratitude and confidence.

Producer Olman Rivera is a fourth-generation farmer known for his commitment to clean, sustainable practices. Working alongside his brothers, sons, grandsons, and granddaughters, he carries forward a family tradition rooted in integrity and steady excellence. Their farm,Finca El Silencio, sits at 1,700–1,800 meters just outside Piendamó in Cauca — a high-elevation region renowned for ideal microclimates and consistently expressive washed coffees.

Finca El Silencio is partially shade-grown, pesticide-free, and managed with regenerative practices, including thoughtful water recycling. The focus here is not experimentation or competition-style processing, but rather careful cultivation and disciplined technique that yield beautifully clean, honest coffees year after year.

The specific lot we selected, LV OL (Summer 2025), reflects Olman’s straightforward, meticulous approach. Cherries are selectively handpicked, washed with precision, and patio-dried under constant supervision. His son, Robinson Rivera, a certified Q-Grader, oversees quality control to ensure each lot remains consistent with the family’s high standards.

What stands out about this coffee isn’t flash — it’s craft: a clear, sweet, medium-bodied washed Colombian rooted in four generations of dedication. We’re honored to share it and thankful to Salem, Susana, and the entire Rivera family for making this partnership possible.
