Cupping Notes

This coffee is going to be a legendary special offering at Peregrine. Thanks to Maximino Palacios and his wife Marlene, we can taste something truly unique.

Here’s what we’re tasting:

Watermelon Candy. This note is killer. It reminded us most of watermelon-flavored Jolly Ranchers or watermelon sour patch. It's sugary sweet and extremely unique for a coffee.

Saltwater Taffy. This coffee has a salty-sweet flavor reminiscent of saltwater taffy. The sea salt comes through beautifully alongside fruity taffy.

Apple Pie. To round things up nicely, this coffee has an excellent malic, apple-like acidity paired with a warm, buttery note that is well-rounded like an apple pie. Who doesn't love apple pie?

Farming Notes

​From the moment we tasted it, we were 100% sold on this coffee. Ben Weiner and his team at Gold Mountain Coffee Growers were so kind to let us cup this coffee at SCA (coffee expo) in Portland in April. Since then, it’s been pure anticipation to get it in and rolling.

Maximino and his wife Marlene are perfectionists who own a medium-sized farm in Jinotega called Santa Adela. Their pickings each day seem to be even more perfectly ripe than the perfect pickings from the day before, which is why Gold Mountain Coffee Growers’ staff found their coffee an excellent candidate for carbonic maceration.

Their cherries for this lot are picked all morning and then journey two to three hours through the mountains to Finca Idealista, where they are double-fermented in an anaerobic environment as whole cherries. Staff take Brix refractometer and pH readings many times each day so that the level of fermentation and pH allow clean fruit notes to abound in the final cup–but none of these notes would be possible without their perfectionist level of picking.
