Now based in the Sangre de Cristo Mountains of Colorado, we carry that same spirit forward. Nestled at high altitude, Peregrine is committed to crafting coffees that inspire enjoyment and connection—whether brewed in a small town café, a mountain cabin, or a bustling city abroad.

I’ve been in coffee for 15 years exploring the specialty coffee scene and often finding it underwhelming, we knew Peregrine had to stand apart. A “specialty roaster” by name wasn’t enough. We wanted to be a specialty roaster by reputation.

We began humbly on a 5lb roaster, tested and refined relentlessly, and graduated to a San Franciscan 10lb roaster. Every batch is cupped, calibrated, and measured against one goal: to consistently exceed our own expectations… to produce something that wows.

The peregrine falcon embodies precision, strength, and endurance; soaring across continents in pursuit of its next meal. In the same spirit, we cross borders to source with care from green coffee producers we know and trust. That precision carries into our roasting, transforming each bean into a canvas for you to craft your own perfect cup at home.

For us, coffee is more than a beverage, it’s a craft, a journey, and a calling. It demands discipline in process, but also invites freedom and creativity. We honor tradition, yet aren’t afraid to break the rules (just taste our barrel-aged coffees).

Behind every cup is a farmer, a family, a story. We partner directly with growers who share our passion for quality, integrity, and sustainability. These relationships ensure that the people who cultivate our coffee are honored for their work, and that every bean we roast has a positive impact at its origin. We have worked with our Burundi farmer for 8 years now. Trusted relationships like these make specialty coffee what it is. Whether from the highlands of Guatemala, the hills of Ethiopia, or the terraces of Nepal where our journey began, our coffees carry with them the hands and heritage of the people who grew them.

Peregrine is rooted in Colorado, but our vision stretches further. Just as the falcon travels great distances, we see our future in new communities; places where we can open our doors, roast on site, and create spaces of connection. Each step of growth will stay true to the values we began with: care for the craft, honor for the farmer, and hospitality for the customer.
