Red Honey comes from Finca San José, a family-run farm in the Santa Rosa de Cabal region of Colombia, often referred to as part of the country’s “Coffee Axis.” The farm is owned by Sr. Gilberto Osorio, a third-generation coffee grower who continues his family’s tradition of cultivating coffee with care and dedication.

This lot is both honey processed and a microlot, making it distinctive in several ways. A microlot is a small, carefully separated portion of a farm’s harvest, often purchased by only a handful of roasters worldwide. While Peregrine did not acquire the full harvest of Red Honey, it remains an exclusive coffee with limited availability.

The honey process, originally developed in Costa Rica as a variation on Brazil’s pulped-natural method, leaves the sticky fruit mucilage around the seed during drying. This technique tends to produce coffees with less-pronounced acidity, fuller body, and fruit-forward flavors, often with a honey-like sweetness that gives the process its name.

This coffee was sourced through Peregrine’s direct trade partners at Traviesa, with thanks to Daniel Osorio and Juanita Villa for their continued work in connecting roasters to exceptional Colombian coffees.
