This coffee comes to us through Rachel Stanich at Covoya, a relationship that began when Rachel was at Red Fox Coffee Merchants. Her immense care and professionalism are what kept us connected as she moved into her new chapter, and we are glad we followed. This lot comes from the community of La Victoria, within the San Martín region of Peru, where coffee farming has been a cherished tradition passed down through generations. In 2020, local families came together to form the Cerro Blanco Producers Association (APROCEB), named after the iconic white sand mountain that surrounds them. The mission behind the cooperative is simple and serious: preserve a coffee-growing heritage while committing to environmental sustainability and collective development.


The coffee is a natural-processed lot, sun-dried on patios at 1,500 to 1,900 meters above sea level. Varieties include Bourbon, Catimor, Caturra, and Typica, grown by various smallholder producers across the cooperative. This is also a certified organic coffee at the farm level, reflecting the producers' commitment to land stewardship and clean agricultural practice.

 

The cup is rich and layered. Black cherry opens things up with a deep, saturated fruitiness that feels ripe and confident. Fudge settles in at the mid-palate, adding a smooth, indulgent body that gives the coffee real weight. Apple cider rounds out the finish with a warm, slightly tangy sweetness that keeps the cup lively and balanced from start to finish.

 

Peru continues to surprise us, and APROCEB is a compelling reason why. This is a cooperative built on generational knowledge and genuine intention, and that comes through clearly in the cup.
