Located in the northern highlands of Cajamarca, Peru, this coffee comes from one of the country’s most respected regions for high-quality, organically produced coffee. Cajamarca has earned a global reputation among green coffee buyers for consistently meeting — and often exceeding — the rigorous standards required for organic certification, while still delivering expressive and refined cup profiles.

Unlike origins dominated by large estate farms, coffee production in Cajamarca is defined by smallholder agriculture. Most producers work modest parcels of land, typically 2 to 3 hectares, allowing for careful cultivation and close attention to quality at every stage.

Within this landscape, Willy Torres Huamán operates Finca Guayaquil, a small coffee and cacao farm located in the high Andes of Pomohuaca. His coffee grows within an agroforestry system, where native shade trees such as banana and guava form a natural canopy over the coffee plants. This approach supports soil health, biodiversity, and long-term sustainability, while also contributing to the coffee’s balance and sweetness.

This lot is notable not only for its cup quality, but also for its scale and integrity. It is both Certified Organic and a nanolot, representing a tiny, carefully managed harvest that reflects Willy’s focused, hands-on approach to farming.

Processed as a washed coffee, this offering highlights clarity and sweetness, with depth that speaks to both the terroir and the care taken on the farm.

In the Cup

Fudge

A rich chocolate foundation anchors the cup, dense and satisfying, recalling classic fudge. The presence of cacao grown alongside the coffee feels more than coincidental.

Cherry

Sweet red fruit emerges next, adding brightness and lift. The cherry note brings balance to the chocolate depth without overshadowing it.

Clover Honey

The finish is rounded and gently floral, with a honeyed sweetness reminiscent of clover honey. This note ties the cup together, adding complexity while maintaining cohesion.
