Why You’ll Love It
This barrel-aged coffee is rich, aromatic, and remarkably smooth. Notes of bourbon, cinnamon, and butterscotch create a layered cup that feels both familiar and unexpected, with the barrel character enhancing rather than overwhelming the coffee itself.
Produced by Finca El Colomba in El Salvador, this coffee was aged in freshly-drained bourbon barrels from Lockwood Distilling Company in Richardson, Texas. Through careful barrel aging and a medium roast profile, the coffee develops depth and complexity while preserving the sweetness and structure of the underlying coffee. The result is a collaboration that highlights the craftsmanship of both coffee roasting and whiskey making.
The Bottom Line: A distinctive barrel-aged coffee with warming spice, bourbon character, and rich sweetness. Complex, approachable, and unlike anything else in our lineup.

FAQs
Where do you source your coffee from?
We source our coffees from trusted producers and import partners around the world, focusing on quality, transparency, and long-term relationships. Each coffee is selected for its unique flavor profile and story.
Do you roast all of your coffee in-house?
Yes. All Peregrine coffees are roasted in small batches to ensure freshness, consistency, and clarity of flavor.
How fresh is your coffee when it ships?
We roast coffee regularly and ship as fresh as possible—typically within a few days of roasting—so it arrives at peak flavor.
What roast level is this coffee?
Rather than strict “light / medium / dark” labels, we roast each coffee to best highlight its natural characteristics. You’ll find tasting notes on each page to help guide you.
How should I brew this coffee?
This coffee works well across multiple brew methods. We recommend starting with your preferred method and adjusting grind size and ratio to taste. If you’d like guidance, we’re always happy to help.
Are your coffees single origin or blends?
We offer both. Single-origin coffees highlight a specific region or farm, while blends are crafted to create a balanced, consistent flavor experience.
Do you offer subscriptions?
We do. Subscriptions are a great way to enjoy fresh coffee regularly without thinking about it.
Is this coffee ethically sourced?
We care deeply about how coffee is grown, traded, and shared. While each origin and relationship looks different, we prioritize responsible sourcing and transparency whenever possible.
Why the name Peregrine?
The peregrine falcon is known for precision, focus, and excellence—values that shape how we approach coffee from sourcing to roasting.
