This coffee comes to us through a direct-trade relationship with Salem and Susana Bellah, the husband-and-wife team behind Cormorant Coffee. Susana’s roots in Colombia allow for deep, personal connections with producers across the country, opening the door to coffees that rarely reach the export market. Through these relationships, we are able to access small, carefully cultivated nano lots that reflect the heart of Colombian specialty coffee.
Finca El Roble is a compelling example. In 2025, producer Edilmer made the decisive move from commodity production into specialty coffee. This lot represents his first-ever specialty harvest, and the results speak to both his commitment and attention to detail. Cherries are selectively handpicked every two weeks, processed using the honey method, and patio-dried with care at an elevation of 1,900 meters.
The outcome is a clean, elegant expression of Castillo, showing clarity and balance well beyond what is typically expected from a debut harvest. Rather than leaning on experimentation, Edilmer focused on precision and consistency — an approach that has paid off in a cup that feels composed, expressive, and refined.
This coffee is especially meaningful because Peregrine purchased the entire lot. By committing to 100% of Edilmer’s first specialty production, we are not only roasting a coffee, but honoring a pivotal moment in a producer’s journey.
