Dark Skies is Peregrine Roasters’ flagship dark roast; a blend created to honor place, tradition, and intentional roasting. It represents the deeper end of Peregrine’s spectrum, offering richness and familiarity without sacrificing quality or balance.

The blend takes its name from Westcliffe, a small mountain town set in a high-altitude valley at nearly 8,000 feet. With a population under 5,000 and minimal development, the region is known for its exceptionally low light pollution. In 2015, Westcliffe and neighboring Silver Cliff became the first communities designated as International Dark Sky Communities, recognized for world-class stargazing and the visibility of the Milky Way on clear nights.

Dark Skies was created as a coffee that reflects that environment — deep, grounding, and expansive.

A Thoughtful Approach to Dark Roasting

Dark Skies is the only blend Peregrine intentionally roasts almost to second crack. While modern specialty coffee has largely moved away from darker roast levels, Peregrine believes there is still room for a dark coffee when it is approached with restraint and care.

Rather than pushing roast development to bitterness, Dark Skies is carefully managed to remain on the line between roasty depth and clarity. The goal is not char or burn, but warmth, structure, and sweetness. This approach preserves the integrity of the coffee while delivering the comfort and familiarity many drinkers seek in a darker roast.

For those newer to specialty coffee, Dark Skies often serves as a bridge — recognizable and familiar, yet clearly higher in quality than commodity dark roasts. For longtime dark-roast drinkers, it offers a refined expression that still “tastes like coffee,” without masking the bean itself.

Built on Balance and Comfort

Dark Skies is currently composed of coffees from Brazil and Costa Rica, chosen for their naturally lower acidity and ability to support deeper roast development:

  • Brazilian coffee from producers in Minas Gerais, processed naturally, provide body, sweetness, and nutty depth.

  • Costa Rican coffee, processed washed, contribute structure and balance beneath the roast-driven profile.

Together, they create a blend that leans into chocolate, caramel, and roasted nut flavors, with a gentle smokiness that remains controlled rather than dominant. Dark Skies performs beautifully black or with milk, offering warmth and consistency across brewing styles.
