Timberline is Peregrine Roasters’ flagship blend — the coffee around which the roastery and café were built. Designed first as an espresso and refined to excel across brew methods, Timberline reflects Peregrine’s approach to modern roasting: expressive, balanced, and versatile.
In the café, Timberline serves as our house espresso. Its structure and sweetness allow it to perform exceptionally well as a brewed coffee, making it a rare blend that feels equally at home as espresso or drip.
A Modern Espresso Philosophy
Timberline was developed to move beyond the weight and bitterness often associated with “old-world” espresso, while still retaining the comforting, traditional elements people love. Roasted to a modern medium (Full City) level, it emphasizes sweetness, body, and balance — qualities that integrate seamlessly with milk while remaining articulate on their own.
Rather than chasing intensity or sharpness, the blend is structured around fudge-like depth, caramelized sugars, and syrupy sweetness, anchored by a gentle, well-integrated acidity. The result is a coffee that feels complete without being heavy, and expressive without being demanding.
A Two-Origin Foundation
Timberline is composed of coffees from Brazil and El Salvador, chosen for how they complement one another:
-
Brazilian coffees from multiple fazendas provide body, sweetness, and structure through natural processing.
-
El Salvador’s Finca El Colomba, processed semi-washed, contributes lift, balance, and clarity.
Together, these components create a blend that is stable, consistent, and deeply satisfying — whether pulled as espresso or brewed as filter coffee.
