This coffee comes from Finca Linda Vista, a family estate in Guatemala’s Santa Rosa region, owned and operated by Pablo Chuy. Pablo’s family has been farming coffee here for three generations, and today he leads a team that can grow to more than 75 people during harvest. The farm cultivates several varieties, including Sarchimor, Pacas, and Costa Rica 95.

Linda Vista sits high above Laguna de Ayarza, a volcanic crater lake surrounded by fertile soil and dramatic landscapes. The farm’s location provides ideal growing conditions, producing coffees that reflect both the richness of the land and the dedication of those who work it.

This lot is a Black Honey process, one of the most labor-intensive honey methods. After the coffee fruit is pulped, much of the sticky mucilage remains on the seed during drying. Compared with yellow or red honey processes, black honey involves leaving the highest amount of mucilage intact, requiring constant attention during drying but rewarding the effort with deep sweetness and layered complexity in the cup.

Beyond coffee, Pablo and his team are committed to community development and conservation. In partnership with Mercon Specialty, Linda Vista has contributed to local schools, medical programs, and environmental initiatives, reinforcing its role as both a producer of quality coffee and a positive force in the region.

Like many honey-processed coffees from Central America, this lot offers a profile that bridges the clarity of washed coffees and the fruit-forward character of naturals. Compared with washed Guatemalan coffees, which often emphasize crisp acidity, honey-processed lots such as this one highlight rounded sweetness, syrupy body, and jam-like fruit notes.
